Sunday afternoons we love to have a big family meal together and make a fancier dessert for it. It is our chill afternoon that we can just spend together and cook, clean up and then watch movies or play games. And maybe that is why it is my favorite day of the week. And every time I buy fresh lemons, this lemon pound cake loaf is always on the docket! It is so delicious!
Lemon Pound Cake Recipe (Makes 2 loaves)
- 2 sticks of butter (1 cup)
- 6 eggs
- 1 cup sour cream
- 3 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 cups white granulated sugar
- 3 tablespoons lemon zest
- 4 tablespoons fresh lemon juice
Cream together butter, sugar and eggs. Add the rest of the ingredients with flour last until batter is well incorporated. Place in 2 greased (or parchment paper) loaf pans and bake at 350 degrees for 50-60 minutes until a toothpick comes out clean. Remove from pans and glaze using the recipe below.
Lemon Glaze Recipe
- 1 cup powdered sugar
- 2-3 tablespoons of fresh lemon juice
- 1/2 teaspoon fresh lemon zest
Mix together ingredients for glaze. After the lemon loaves are baked, remove from bread pan and cover with glaze. Let set and then serve.
