Simple Pumpkin Muffin Recipe
I have one child who lives for anything pumpkin! So in the fall these muffins become an absolute staple in our house. In fact we made two entire batches of these for fall break and they are already gone. And the best part is…there is only three ingredients! And my guess is you already have most of the those in your pantry right now. These really are the best pumpkin muffins I have ever tasted!
Pumpkin Muffin Recipe
- 1 15 oz can of pumpkin puree
- 1 spice cake mix
- 1/2 teaspoon of pumpkin pie spice
Directions:
Combine pumpkin puree, spice cake mix and the teaspoon of pumpkin pie spice into a large bowl. Mix and drop into muffin papers.
Bake at 350 for 18-20 minutes or until a toothpick comes out clean.
Optional:
*Add 1 1/2 cups of chocolate chips to the batter and bake.
*After you have made the muffins and scooped into the muffin pans, add some sanding sugar mixed with cinnamon on the top (these give a that crunchy coating to the top that is delicious!)
