A breakfast bacon, egg, and spinach salad? Yes! A breakfast bacon, egg, and spinach salad.
Admittedly I am not a breakfast eater. Never have been.
While my family loves pancakes, waffles, cereal, bacon, sausage, corned beef hash, muffins, syrup, etc. I’d rather just get to work and then at lunch time have something I really like…like a soup or nachos or…a salad.
A few Saturday’s ago however while my husband and the kids were in the middle of the breakfast making extravaganza I decided to make myself something….and I have been eating it a few times every week since.
So here’s what it is:
*A giant handful of fresh spinach
*A sprinkle of matchstick carrots
*2 pieces of crispy bacon crumbled
*1 fried egg
*A table spoon or two of Feta of Goat cheese sprinkled on top
****OPTIONAL*** A little Poppyseed Dressing….the fried egg adds a nice creaminess to the salad but if you want a little more some Poppyseed dressing pairs really well with this salad.
It’s easy, it’s good and the best part is it contains everything my doctor is telling me I need to start the day with…especially the protein and iron part. But this combination is also high in vitamins A, B6, B12, C, D, and K as well as manganese and magnesium.
***QUICK TIP***
On Saturday I prepare (wash, cut, crumble, etc) the spinach, carrots, and bacon and place them in containers. Then through the week I can put an egg on the stove to fry and while it’s cooking pull out the other ingredients from the fridge, put what I want in the bowl, put the leftovers away and then slide my now finished egg on top of the salad fixings…make it a super fast meal with easy clean up. Just a bowl and a frying pan.
