I know it doesn’t look like much in the picture….but I am telling you this is one of the best soups I have ever had! The night we had it for dinner my husband (who is not a big soup eater) declared it one of his favorite meals.
Chicken Pot Pie Soup Recipe
1/4 cup of butter
1/4 cup flour
4 cups milk
2 cups chicken stock
2 cups cut up rotisserie chicken
1 small bag of frozen peas and carrots (approximately 2 cups)
1 cup cubed cooked potatoes
Seasonings–salt, pepper, poultry spice, thyme and rosemary
In a soup pot, melt butter and add flour to make a roux. Stir for 1 minute and then add the 4 cups of milk. Stir until the white sauce is creamy and thick. Then add chicken stock, cut up chicken, peas and carrots and potatoes. Add the spices you like to the mixture and serve with warm bread and a salad. It’s so good!
