My mother-in-law recently sent us home with a huge bowl of some of the last garden tomatoes so we put together a huge batch of garden salsa. The intention was to can a bunch of it, but it was so yummy and delicious that we never really got to the canning party and most of it was gone from our fridge in a week’s time.
I LOVE blender salsa and it really is one of the simplest things to make and have on hand. It is one of my favorite things to eat for lunch! Here is the recipe that I always use.
Fresh Tomato Blender Salsa Recipe
10 fresh garden tomatoes (roughly chopped)
1/2 bunch of cilantro with stems off
1 small red onion
1 jalapeno seeded (if you like spicier you can leave the seeds in for more heat)
2 T. Fresh lime juice
1 t. cumin
1 T. kosher salt
1 large clove of garlic
1 t. sugar (if needed)
Place the roughly chopped tomatoes and lime juice in the bottom of the blender. Add all other ingredients and pulse until desired consistency. Serve immediately with chips and be sure to make enough for leftovers–it’s delicious the next day!
