When I need a crowd pleaser meal I tend to stick to basic homemade things that taste yummy but are simple to make. And today’s Simple Chicken Salad Recipe is exactly one of those recipes. I often take it to people when they have had a baby or I need a quick summer meal. It’s easy to serve with a veggie tray and chips for large crowds too!
Simple Chicken Salad Recipe:
1 rotisserie chicken cut up into cubes
1 cup grapes (I use both red and green–can use dried cranberries)
1 bunch of green onions
1/4 cup finely diced celery
2 T. grated white onion (can omit)
1/2 cup Best Foods Mayonnaise
1/2 cup sour Cream
1/2 t. lemon juice
1 t. salt
1 t. coarsely ground pepper
In a bowl combine mayo, sour cream, grated onion, and lemon juice and stir together. Add the dressing mixture to the chicken, celery, grapes and green onions. Salt and pepper to taste. Cover and let stand in the refrigerator for 1 hour. Serve with croissants and a green salad.
I even just love to eat it the next day for leftovers for lunch in a small bowl…with some veggies and pickles…it’s so delicious!
