Today we have an easy, slow cooker, Chicken Tortellini Soup Recipe to share with you.
(That I am currently eating right now for lunch…it’s leftovers from last nights dinner!)
Here’s how to make it:
In your slow cooker combine the following:
*8 cups of chicken broth
*1-2 cups of shredded chicken (this soup is a great way to use left over chicken) OR 1-2 uncooked chicken breasts diced
*1/2 white (or yellow) onion diced
*1/2 cup celery diced
*1 cup carrots diced
*1 Tablespoon of garlic minced
*1 Tablespoon of Italian Seasoning
Cook on low for 6-8 hours then….
*30-60 minutes before serving add 1-2 cups of frozen tortellini (if added before this it will get soggy and fall apart)
Serve with yummy bread and enjoy!
***NOTE:
I will often add anything else that I happen to have on hand to the soup as well…some of our favorite extras include:
*1/4 cup of red or green peppers diced
*1/2 cup of zucchini sliced
*1/4 cup of corn
*1/4 cup of peas
* 1/2 cup of cannellini or kidney beans
While we do eat this soup during the colder months we eat it most often during the summer with a salad…it’s one of my favorite summer meals.
