This Irish Stew Recipe is one of my favorites.
Is it actually an Irish Stew??? I don’t know.
Do I have ancestors from Ireland? Sure do.
Did they eat this stew? Doubt it.
But is it delicious? You better believe it.
Here is what you’ll need to make it:
*One large pot
*8-12 cups of chicken stock
*1-2 cups chopped ham
*1-2 cups pre-cooked chopped chicken
*1 can diced green chilis (4 0z)
*1/2 white or yellow onion diced
*4-6 medium sized potatoes chopped
*1/2 head of cabbage chopped
*salt and pepper to taste
And here is how to put it all together:
#1. Combine all ingredients except the cabbage, salt, and pepper into your pot and bring to a low boil.
#2. When your potatoes are almost cooked through add your cabbage and continue to simmer until potatoes are done.
#3. Add salt and pepper to taste.
*NOTE: With the ham and chicken stock this stew can get salty quickly so taste before adding salt!
#4. Pair with some deliciously crusty bread and enjoy!

How interesting! We too have a family Irish stew that goes back to who knows when, but it’s so different. It involves what we know in the UK as neck of lamb (very bony but delicious), root vegetables and crucially, pearl barley. It’s simply cooked for hours and hours until the meat is falling off the bones, and served with old fashioned suet dumplings.
