As soon as my feet hit the floor every morning I feel like it’s a race against the clock…everyday. Get everyone up, dressed, and fed. Take the dog out, change the laundry, let the dog in. Empty the dishwasher, load the dishwasher. Take the kids to the library, to visit grandma, and stop by the grocery store on the way home. Get everyone settled into an activity or playing with friends. Hit the gym. Fill the car up with gas and start making dinner….when suddenly I to realize I haven’t eaten anything today except for a soda and a granola bar or a handful of crackers that I stole from the kids. Sound familiar? And in the mean time I am dragging…tired…irritable and running out of steam. I function like this more than I’d like to admit. I love my life…I wouldn’t trade my kids for anything, I feel so lucky to have all the opportunities afforded to me through blogging, and I’m happy to be training for another marathon with my brothers this fall….but…some days (most days) it is a lot of work….and making myself a warm lunch isn’t usually on my to-do list. Although…it really should be. On days when I skip meals I feel tired and worn down which makes my regular routine so much harder…but then again I know I’m never going to take the time cook myself a hot lunch and so the cycle continues. Until recently. Recently I tried something new…and I will admit I was a little skeptical at first…but after I tried them I was hooked.
What I tried were Chicken Jalapeno & Cheese Lean Pockets…
and they are delicious….spicy, gooey cheese and chicken wrapped in pretzel bread…which is great because I like things that are spicy and delicious…but here is why I was really hooked: *They have less calories (only 260) and more protein (12 grams) than the granola bars I usually grab on the way out the door. *They take less than 3 minutes to prepare from start to finish. *They are warm (and I love warm food). *They are inexpensive (costing less than $2 a pocket). *I can savor a delicious meal whether I’m on the go or sitting down to eat. *They contain no artificial flavors. It is a real solution for busy lifestyles…and a solution that not only allows me to continue my daily race against the clock but that I can also afford and feel good about eating. My personal lunch time solution is to drain a can of water-packed tuna, mix in a tablespoon on light mayo along with a squirt of sweet pickle relish and seal it into a container with a snap on lid. I’ll add a piece or two of light wheat bread to make a sandwich during my lunch break. ON the side, I’ll have some fresh veggies with light ranch dip and a piece of fruit. It’s a power lunch that keeps me full til dinner time!
