Do you have an Spring traditions? One recipe that is quickly becoming a family tradition are these 3 ingredient coconut truffles…or “bunny tail cookies” as my kiddos like to call them. And since they are a simple, no bake recipe we make them often 😉 And they would be the perfect treat for an Easter or Spring party…because they really do look like Bunny Tails.
You probably have most of the ingredients in your pantry right now so you can make them today!!!
Ingredients:
1 T butter
1 can sweetened condensed milk
1 package of sweetened coconut
Here’s how you make them:
Pour 1 can of sweetened condensed milk into a saucepan with 1 tablespoon of butter and stir until the mixture starts to boil. Take out 1/2 cup of coconut from bag and pour into a separate bowl. Then add the rest of the bag of coconut into the sweetened condensed milk mixture. Stir until the mixture just begins to turn brown. Then take the mixture off the stove top and refrigerate until cold. When the mixture is cold, form into a small truffle sized ball. Then roll in the reserved coconut and store at room temperature.
This batch only lasted one afternoon in our house…..even my pickiest eater loves them!
