Do you ever have those days where you are so busy with a hundred things going on and you get to 5 o’clock and haven’t even taken a thought about what is for dinner?
Me? All.the.time.
So, over the years I have put a few good 30 minutes recipes in my repertoire (with pantry ingredients) that I can whip up on those days. And homemade mac n’ cheese is one meal that no one in my house will complain about. It’s fast, it’s easy and I put it on the table with a salad to call dinner done.
Here is my recipe:
1/2 stick of butter melted in a sauce pan.
Add 1/4 cup flour to the melted butter to make a thick roux.
When the roux has cooked about 2 mins, add 3 cups milk and stir until thick.
Add 2 cups of your favorite cheeses. (Sharp cheddar and parmesan are my favorite.)
Then I add spices to the cheddar sauce…..mustard powder, salt, pepper, a dash of red pepper flakes and a pinch of nutmeg.
Stir in 1 box of cooked macaroni.
And you are done!

I like this old Joy of Cooking recipe: boil spaghetti, meanwhile, sautee a clove or 2 of garlic in olive oil in a large sauce pan until fragrant. Add a can of baby clams with liquid, a pound of raw shrimp (peeled and deveined), and dried parsley (~1/4 cup or to taste). Cover and simmer until the shrimp are pink and no longer translucent. Poor shrimp and clams over drained spaghetti and serve. You can garnish it with parmesan cheese, if you like, or omit the dried parsley and garnish with fresh. It’s a quick recipe that’s easy to alter by changing the proportions of garlic, clams, or shrimp. You can also add white wine or butter to the sauce.

We love homemade mac and cheese at our house, too. Two other quick and simple meals my kiddos love are Hawaiian haystacks and bagel sandwiches. For the bagels, the kids love flavored cream cheese and they call it good, but my husband and I build a great bagel sandwich by adding a layer of chive cream cheese, deli meat and top with cheese and tomato, then broil it so the cheese gets bubbly and then add lettuce at the end.
