This really is the world’s easiest Chili Con Queso Dip and next to salsa it’s my favorite thing to dip my chips into to!
It’s the perfect dip to make for family movie nights or for game day parties because its inexpensive to make, easy to put together, and delicious.
Here’s how to do it:
In a crock pot combine:
1 16oz. package of Velveeta Cheese
2 cans of Chili with Beans. (I prefer to use Hormel’s HOT Chili)
and that’s it.
Just heat until bubbling hot.
(And sometimes…because I am cheap…I only use half of the brick of cheese and one can of chili…which makes plenty for my family for one evening of snacking.)
Now, while the Velveeta and Chili are great together there are a few other things I like to add into the mix if I have it on hand like:
*1 finely chopped jalapeno
*1 can of Rotel Original drained
*1/4 cup of finely chopped onions
*1/2 cup of finely chopped cooked chicken
*1 small can of diced green chilies
*1/4 cup finely chopped red or green peppers
*1 can of black beans
*1 clove of garlic
1/4 cup of crumbled bacon
*Freshly shredded Colby Jack cheese sprinkled on the top
Any of the ingredients above are great to add to the mix so play around. Experiment! Mix and match what you like the best until you have discovered your favorite concoction.
(My personal favorite is to add the jalapenos and a can of Rotel….but my husband likes it best plain with just the cheese and chili.)
