One more thing. My food assignment this year is stuffing and some of the pies….the pies I am fine with. I have a great homemade pie crust recipe I have made many a time and I am making the simple ones—apple and cherry.
But the stuffing…that’s another story. And a confession. My mom always makes the stuffing…and although I have helped her tons, I have never made it on my own. AHHHH!
I am going to practice early next week with a small batch and see if it’s okay.
Can I royally mess up the stuffing? I am a teensy bit worried….

I’m a long-time lurker, low-volume commenter, but this is too good not to share. My mom’s crockpot stuffing is easy and delicious!
Crockpot Stuffing
Serves: 15-20
1 cup margarine or butter
2 cups chopped onions
2 cups chopped celery
Parsley
12 to 13 cups bread cubes (you can dice up a loaf of bread or by the package of cubed bread for stuffing)
1 lb. Sausage, cooked and scrambled
1 ½ tsp salt
1 ½ tsp sage
1 tsp dried thyme
½ tsp pepper
2 cups chicken broth
2 eggs, beaten
Melt butter in skillet and sauté onion and celery. Pour over bread cubes in very large bowl. Add sausage and seasonings and toss together well. Taste. Add more sage and thyme if desired. Add 1 can of chicken broth and eggs just to moisten. Then, pack lightly into crockpot. (You can make this the night before and put the crockpot in the fridge. Then, take it out Thanksgiving morning to cook.) Cook on low for 4 hours. Do not make this too moist and do not overcook. If it looks done, turn it off.

Maple Bacon? Anything with bacon is just plain good…..it that recipe sound delish!
