Oh Tortilla Chips. How do I love thee? Let me count the ways…
I love tortilla chips and today just happens to be National Tortialla Chip day.
(No, I’m not making this day up….like the time I told everyone it was MC Hammer Appreciation Day or the time I claimed it was National Peg Your Pants Day or when I said it was Poke Someone in the Eye Day or…well…it’s none of those times…this one is ligit…in fact it’s too ligit to quit hey! hey!…ok, I’ll stop.)
So…tortilla chips. Yum.
Today I’m going to give you a super fast, super yummy Corn and Black Bean Salsa Recipe.
In a big bowl mix:
1 drained can of black beans
1 drained can of whole kernal corn (or about 1 cup of frozen corn thawed)
2 cans of Rotel tomatoes mostly drained
1/2 onion chopped (I like purple onions but any kind will do)
Stir and Enjoy…unless you want to get fancy then add:
some chopped cilantro (some like a little, some like a lot)
a dash or two of lime juice
Yum….lime…which reminds me…did you know Wednesday was National Margarita Day?
Well it was.
That’s a fact.
(Not like that time I said it was Hug a Saskwatch day.)
Which doesn’t really make sense to have Margarita Day on Ash Wednesday. Fat Tuesday makes much more sense. Don’t you think? Oh well. I don’t make up the holiday’s (usually) I just celebrate them and today is all about the tortilla chip!
So let’s celebrate the tortilla chip with some delicious salsa.
(You can either do that or hug a saskwatch, take your pick.)

Ack! When I posted this I totally forgot that it was $5 Friday! But it’s ok…(not that any of you were worried)…just for the record it does cost less than $5 to make this salsa.
