Ok…I’m obsessed with the Chilean miners being rescued. I can’t quit watching CNN! My kids and I have piled our work (and toys) around the TV so we don’t miss a rescue. How happy I am for these men and their families. And how much do I love “Super Mario”?
To celebrate the rescue we are having chili tonight for dinner. What does chili have to do with Chilean miners? Nothing but Chile and chili are pronounced the same (if you talk like me) so there’s my connection. (I don’t need much of an excuse to celebrate or to make chicken chili.)
And since this is one of my favorite meals and is so super easy to make I thought I’d share the recipe:
Chicken Chili:
(Dump all these ingredients into your crock pot)
2 cans of chicken drained (although I usually only use 1 can)
1 can Rotel canned tomatoes with chili’s–mild
1 can green chili’s
Now drain the following and add:
1 can corn
1 can pinto beans
1 can kidney beans
Finally add 1 pkg. dried Ranch salad dressing and 1 pkg. taco seasoning mix.
Cook on low for 4-6 hours (or on high for 2-3 hours). Add grated cheese, sour cream and crushed tortilla chips for extra yummyness.
That’s it. So easy…mine is already cooking! Which is perfect—now I have more time to watch the rescues. Hooray for chili and for Chile! (Miner #20 just emerged!!!)
